Just leave the -u out if you want it as the default.  You just set an 
ACL for user 'default'.

Depending on what is set at the root (or the value of AclMode.. see 
other posts) this may not be enough - the default is to allow 
everything, so you need to explicitly deny write/tag/control rather than 
allow read.
